Kale, Quinoa and White Bean Soup

This soup includes Thrive Life (TL) Freeze Dried Vegetables.  Thrive Life is more than food storage it's perfect for everyday uses.  For soups you just toss, cook and enjoy.

If not using homemade vegetable broth, be sure to determine you and your family's preference.  It's amazing how one of your favorite soups can turn out completely different by using a different broth.  

Simple Mills has a great line of gluten-free, no refined sugar crackers, artisan bread and other baked goods.  Available online at iHerb.com or Vitacost.com.

Serves: 4-6

Ingredients:
1 Tablespoon Extra Virgin Olive Oil (EVOO)
3 cloves garlic, minced
3/4 cup TL Carrots or 2 large carrots, diced
1/2 cup TL Sliced Onions or 1 onion, diced
1/2 cup TL Celery or 2 celery stalks, chopped
1/2 cup TL Kale or small bunch
    Kale, ribs and stems removed, chopped small
2 cartons of vegetable broth

1 can Muir Glen Fire Roasted Tomatoes
1/2 cup quinoa, uncooked
2 cans cannellini beans, rinsed and drained

Seasoning:
2 teaspoons Herbs de Provence
Pinch of Red Pepper Flakes
Salt and pepper, to taste

Optional Topping:
1 c raw almonds
2 Tablespoons of nutritional yeast
1/2 teaspoon Celtic sea salt
1 teaspoon garlic powder
​Toss all in high speed blender and blend to desired consistency, store in the refrigerator

Method:

If not using Thrive Life vegetables, heat EVOO over medium heat add onion and saute for 3-5 minutes, add carrots, celery, garlic, seasoning, cannellini beans, tomatoes and broth.  Bring to a boil, cover and reduce temperature to simmer.  Simmer 25 minutes then add Kale and simmer until wilted.  

If using Thrive Life, saute minced garlic in EVOO 1 minute then add broth and remaining ingredients including seasoning.  Bring to a boil then cover and reduce to a simmer 25 minutes.

If you have non-vegetarians to please, try re-hydrating needed servings of Thrive Live sausage crumbles.  Sausage may be stirred into individual servings.
