Gluten-Free Broccoli Pasta Salad

This pasta salad is full of surprising flavor.  I think it's the fresh Basil and Balsamic vinegar that is such a delight.  Prepare Simple Mills Artisan Bread by the muffin recipe.  I use two muffins and my trusty Vitamix (dry pitcher) to make the crumbs in a flash.  It's best to work with completely cooled muffins.  The dressing below is a double batch.  Add a splash of Tessemae's Ranch Dressing to the finished dish and toss for an extra punch.

Getting ready for a fun event and taking these cookies to share.  They are gluten-free, no added sugar, vegan and delicious.  I've shared these with co-workers and they quickly disappeared despite them lacking traditional ingredients..

This came in handy as I had something else prepared for my family and needed a quick solution for me.

Steel Cut Oats

While limiting grains, I do have oatmeal from time to time and prefer Organic Steel Cut Oats.  It takes longer but worth the wait.  Make according to package directions.  I crumble Thrive Life Fuji Apple slices in the last few minutes of cooking, add Simply Organic Cinnamon, Date Lady date sugar, chopped nuts and a non-dairy milk.  I think next I'll try adding a splash of Nut Pods instead of the non-dairy milk.  Nut Pods is a non-dairy, unsweetened alternative creamer.  Look for it at your local grocery or at www.nutpods.com. 

Veggie Wrap

Workday lunch.  I prep the Veggie Spread (see earlier post) and veggies the evening before for a quick pack time in the morning.  Siete Foods Almond flour Tortillas are a staple and work great with this meal.  Simply apply the Veggie Spread, top with a variety of sprouts and veggies and jazz up with a drizzle of vinaigrette or dressing.  Yum!

For the vinaigrette use 3 parts olive oil to 1 part red wine vinegar or lemon juice.  Add sea salt, pepper, Mrs Dash and Thrive Life Italian Herb blend. 

​For a dressing, try Tessemae's Creamy Ranch (Organic, Whole30 Approved, Keto Friendly, Dairy Free, Sugar Free, and Gluten Free)..  Look for Tessemae's dressing in the cooler section of your local grocery or check the website for availability in your area.

Chewy Gluten Free Cookies

Thinking about the Holidays, what's better than cookies?  These cookies are fabulous with a variation suggested in the notes and pictured.  I think both the spice and lemon-poppy seed versions will be crowd favorites.  These cookies bake up great and freeze well.

My choice for ingredients include Bob's Red Mill almond flour and baking soda, Simply Organic spices, Date Lady date sugar and syrup plus Young Living's Lemon Vitality.

Pasta and Goat/Sheep Cheese

The variety of cheeses currently available is astonishing.  Since I have investigated nearly every item available in at least five local grocery stores, I was pleased to find a selection of goat or sheep cheeses that are easy on my digestion.  This recipe takes advantage of gluten-free or low gluten pastas combined with a couple of cheeses.  Bread crumbs?  Oh yes, created using Simple Mills Artisan Bread mix baked as rolls.  See side bar for referral links.

Amazing Gluten-free Waffles

Love these waffles.  They are great for breakfast or dinner.  Double the batch and freeze any extras with a toaster compatible size in mind.  I usually freeze any extras with parchment paper as a separator.  Great with nuts or unsweetened dried fruit added to the batter.

My staples include Bob's Red Mill flours, baking soda and arrowroot powder.
