Gluten Free Strawberry Chocolate Cookies

What better combination than strawberries and chocolate?  Now it's possible with no refined sugar thanks to Date Lady.  I decided to tweak my favorite cookie recipe and add in Thrive Life freeze dried strawberries (powdered using my Vitamix).  The results - delicious.  Added the chocolate goodness with Date Lady's Chocolate Spread.  These cookies are chewy.  I decided to store them in the refrigerator without the chocolate spread then add it right before serving.

Ingredients:
  • 4 Tablespoons unsalted butter, melted and cooled
  • 1/2 cup Date Lady date sugar
  • 3 1/2 Tablespoons Date Lady date syrup
  • 1 large egg
  • 2 cups almond flour (super fine)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon of vanilla
  • 1/4 cup powdered Thrive Life freeze dried strawberries, plus more for sprinkling
  • 1/8 teaspoon salt

Method:
  1. Preheat oven to 350 degrees.  Line two baking sheets with parchment paper.  Fill a small dish or bowl with water.
  2. In a large bowl, whisk the melted butter, date sugar, date syrup, egg and vanilla.  
  3. In another bowl whisk the almond flour, baking soda, salt and powdered strawberries.  Add the dry mixture to the butter-date syrup mixture and stir well to combine (dough will be sticky).
  4. With a teaspoon or your fingers, scoop out walnut-size portions of dough.  Dampen your hands, then roll the dough portions into balls.  Place them on the parchment lined baking sheet about 1 inch apart.  Gently press cookies with a fork dipped in water to flatten.  Sprinkle with powdered strawberries (optional).
  5. Bake until cookies are set and slightly firm to the touch.  10 to 12 minutes.  Remove from the oven and cook on the baking sheet for 5 minutes, then transfer to a wire rack to completely cool.
  6. Store in an airtight container at room temperature for up to a week or freeze.
  7. When ready to serve top with Date Lady Chocolate Spread.
