Fruity Cookies

Getting ready for a fun event and taking these cookies to share.  They are gluten-free, no added sugar, vegan and delicious.  I've shared these with co-workers and they quickly disappeared despite them lacking traditional ingredients..


Adapted from vegetarian.about.com which resolves to a different website these days but found a similar recipe to this one there.
Ingredients:
  • 3/4 cup oatmeal
  • 1/4 cup dried fruit, chopped
  • 1 banana mashed
  • 1 Tablespoon of nut or other unsweetened milk
  • 1 Tablespoon of 100% fruit spread
  • 1/4 teaspoon sea salt
  • 1/4 cup nuts, chopped

Method:
  1. Preheat oven to 375 degrees.
  2. Mash together all ingredients thoroughly.
  3. Add a bit more nut milk as needed.
  4. Drop by spoonfuls onto a parchment lined baking sheet.
  5. Bake for 10-12 minutes or until lightly golden brown.
